That's why it's probably a good idea to listen to him when he reveals his favorite chef's knife. According to the Daily Meal, at the premiere of his new documentary Wasted, Bourdain said that his chef's knife, a multi-purpose knife that can be used when preparing dinner, is the Global G-2 eight-inch knife. If you want to equip your kitchen with more than one knife like most of us, Bourdain has a few more recommendations. He personally carries a flexible boning knife.
Like his chef's knife, Bourdain's knife comes from Global. However, as he points out, you can go to a butcher to buy your meat to avoid the need to trim your meat. The jewel in the crown of this exhibition is the chef de Bourdain, a knife that was forged specifically for him by master knife maker Bob Kramer and was his prize possession. While a paring knife is a little less versatile than a chef's knife in a commercial kitchen, it's still an incredibly useful tool to have on hand.
If you think a knife won't be able to meet your needs (although he insists you should), then he suggests a small paring knife if you do a lot of fancy work preparing vegetables.
