Inexpensive knives can do the job and have basically no worries. On the other hand, spending more will give you one that will last forever and is probably also a work of art. Knife sharpeners do not spoil knives, but it is possible to ruin them if you sharpen them incorrectly. It's a compact camping set with two especially good knives, a six-inch folding chef's knife and a six-inch folding steak knife (yes, they're full size, they're made of the same steel as normal ones).
We still recommend buying a knife set with a block because they're cheaper, and it's not exactly true that you're going to buy a lousy knife set just because they're sold as a set. I'm a particular fan of the nakiri knife (seriously, I've never had such an easy time cutting vegetables) and the boning knife (specific, yes, but it's very useful when cooking meat and fish). Wusthof is also doing a good job in the knife niche and I love their German chef knife design, among other things. This recommendation from recipe developer and cookbook author Louisa Shafia is not strictly a knife set with only knives included, but rather comes from the knife company Messermeister, which she has been using since she went to cooking school a couple of decades ago.
The best part is that the knife set comes with the knife block, giving you an even better deal for your money. You can even choose to buy this one, a bread knife and a paring knife just from the brand, to start with. If properly maintained, especially if you follow this knife maintenance guide, you should even get more than those five years on the knife set.
